*Bison Breakfast Sausage

So, last week I mentioned that we found a new recipe for Bison Breakfast sausage. Here you go.
Ingredients:
1 Tbl dried sage
1 Tbl Onion Powder
1/2 tsp fennel seeds, crushed
1 lb. ground bison meat
1 egg white
2 tsp brown sugar
Salt & pepper to taste
Vegetable Oil (as needed)
Directions:
1) In a large bowl, combine all of the seasonings & brown sugar, and mix well. Add the ground bison and mix to incorporate. Add the egg white and season to taste.
2) With wet hands, divide the meat mixture into 8 equal portion, and flatten into round discs that are about 1/2 inch thick.
3) Heat 1 Tbl vegetable oil in a skillet over medium-high heat. Add the patties and fry until golden brown and cooked through, about 2 minutes per side.
We made giant patties our first time. They are so good with breakfast - eggs, hash browns or in a scramble.
