Blackberry dessert cups


What's better than chocolate covered blackberries...Dessert cups with blackberries covered in yummy ganache.


Ingredients:

3/4 Cup Heavy Whipping Cream

2 boxes Chocolate dessert Cups (Wal Mart)

Fresh/Frozen blackberries 2 - 3 blackberries per dessert cup (about 70 berries or 1 pint)

14 oz Orange chips (finely chopped)

1 Cara Cara Orange

*Zest of 1 orange

* 2 teaspoon orange juice - divided

2 Tablespoons Butter


Directions: Be sure to read through the recipe and the tips/explanations so you know exactly what you are doing & why.


1. Heat the cream, zest & 1 teaspoon of orange juice in a small saucepan over medium heat. Stir it until the mixture barely comes to a boil. Simmering - meaning bubbles are forming around the outside of the pan. Remove from heat and allow the flavor to infuse into the cream for 30 minutes or more.



2. Meanwhile, place the chopped colored chocolate into a medium heat proof bowl. Add the remaining 1 teaspoon orange juice and butter to the bowl. Set aside. Also, prepare the dessert cups by placing 2 - 3 blackberries in each one. This will make approximately 48 cups (or 2 boxes).



3. After 30 minutes or so, place the flavor infused cream back over medium heat until it barely begins simmering again. Pour warm cream mixture into bowl with the chocolate. Gently stir until all the orange chocolate is completely smooth and melted. Cover with plastic wrap pressed on top of the ganache filling. Let it sit at room temperature for at least one hour. The ganache should be thick enough to put in a piping bag.


4. Spoon ganache into a piping bag. Fill about 1/2 full, cut a hole in the tip of the piping bag. Squeeze ganache filling over your blackberry dessert cups until the blackberries are covered and cup is full.


5. Store in fridge for a few hours (or overnight) before serving.


*Variety option:

Use semi sweet chocolate chips with the orange flavoring for a chocolate ganache.
