Breakfast Bake

I like the breakfast bake whenever I have left-over meat that I'm not sure what to do with. I had some left-over sloppy joe mix and decided to make a breakfast bake.


Ingredients:

1 pkg (12 - 16 oz) Frozen Hash browns

*For low-Carb option use Holiday Cauliflower rice

12 Eggs

1 lb Maple sausage (or any left-over meat)

*I used left-over sloppy joe mix for this one

Minced Onion

Garlic

Butter

Dressing: Salsa & Cilantro Lime Crema dressing mixed

Shredded cheese

Non-stick cooking spray


Directions:

  1. Preheat the oven to 375* and spray a glass 9x13 glass pan with non-stick cooking spray.

  2. Cut up butter into small squares and place in the pan so there is an even amount throughout.

  3. Spread frozen hash browns (or cauliflower rice) evenly over the butter squares.

  4. In a medium to large bowl, crack 12 eggs, mix them with minced onion and garlic (and any other spices you wish).

  5. Spread left-over meat/sloppy joe mix over hash browns in an even layer.

  6. Pour egg mixture over meat and top with a layer of shredded cheese.

  7. Bake uncovered for 1 hour or until a fork comes out clean.

  8. During baking time, mix some salsa and Cilantro Lime Crema dressing in a small bowl. This will be used to top the breakfast bake before eating.


This will keep for up to a week, so you can enjoy it for breakfast, lunch or dinner.
