*Citrus Chicken Tacos

This is a super easy sauce that you can use with shrimp or chicken. I found doing it on chicken makes a delicious citrus chicken that is fabulous on tacos. This can be low-carb depending on the tortillas and how much you have.
Ingredients:
2 lbs Chicken (breast, thighs or tenders), diced
1/4 Cup Olive Oil
1 Tablespoon Honey
1 Tablespoon Minced Garlic
1 1/2 teaspoons Salt
1/2 teaspoon Pepper
1/2 teaspoon Lemon zest
1/2 teaspoon Lime zest
1 teaspoon Paprika
1 Tablespoon Cilantro *Optional
Directions:
In a small bowl whisk together olive oil, honey, garlic, salt, pepper, lemon and lime zest and paprika.
Chop chicken into bite size pieces, or cubes (to be cut smaller after cooking).
Put chicken into a gallon size Ziploc bag and add sauce mixture. Toss or move around until all chicken is coated. Put in fridge a few hours or overnight.

4. Set smoker or grill to High 450*. Place marinated chicken on large cooking tray (lined with foil or sprayed with non-stick cooking spray).
5. Cook 5 - 6 minutes, then turn over and cook an additional 5 - 6 minutes until all chicken pieces are cooked. They will be firm and white when done.
6. Once cooked, if your pieces are cubed, you can cut them into smaller pieces for a better fit in your taco.

7. Add chicken to taco shell or tortilla. Top with cheese, lettuce or cabbage, salsa or tomato and guacamole and enjoy!
