*Dessert Bars - Regular and Gluten-Free


I found this delicious recipe that I can make and top with curd or just leave with the strawberry glaze. I decided to try different flavors and did one gluten-free.


First is the Strawberry Coconut Bars.

Dessert Bar batter Ingredients:

1 Cup Flour

3/4 Cup Sugar

1/4 teaspoon Salt

1/4 teaspoon baking powder

1/4 Cup Strawberry Curd *See last weeks blog Strawberry Shortcakes for curd recipe

2 Large Eggs

1 Large Egg Yolk

1 teaspoon Coconut Extract

1/2 teaspoon Vanilla

1 stick butter, melted and cooled a bit


Glaze:

3/4 Cup Powdered Sugar

1 Tablespoon Sour Cream

1 Tablespoon Strawberry Curd

1 teaspoon coconut extract


Directions:

1. Preheat oven to 350* and spray or grease and 8x8 pan.

2. In a large bowl, whisk together the flour, sugar, salt, and baking powder.

3. In a separate bowl or large measuring cup, whisk together the eggs, egg yolk, strawberry curd, vanilla and coconut extract.

4. Add melted butter to the dry ingredients followed by wet ingredients mixture; mix until combined and no dry streaks remain.

5. Spread batter evenly in prepared pan.

6. Bake for 18 - 20 minutes until toothpick comes out clean or with moist crumbs. The top of the bars should spring back when gently pressed. Don't over bake or they will be dry.

7. For glaze, whisk together the powdered sugar, sour cream, coconut extract and strawberry curd until well combined.

8. While the bars are still warm, poke holes in the bars with a fork and pour the glaze into the holes. Spread any extra over the top evenly.

Strawberry Lime Gluten-Free Dessert Bars.

Dessert Bar batter Ingredients:

1 Cup Gluten -Free Flour

3/4 Cup Sugar

1/4 teaspoon Salt

1/4 teaspoon baking powder

1/4 Cup Lime Juice

1 Tablespoon Lime Zest

2 Large Eggs

1 Large Egg Yolk

1/2 teaspoon Vanilla

1 stick butter, melted and cooled a bit

1 Tablespoon Strawberry Curd

Note: The Gluten-Free bars will not rise as much as the regular ones.
