*Greek Alfredo Chicken

I know, I know, I'm mixing my cuisines - Greek & Italian. It worked out really nicely though and it was a very successful food experiment.


Ingredients:

3 English Cucumbers (or you can use Zucchini)

3 - 4 Chimichurri chicken breasts

1 Can Cream of chicken

1 Cup Tzatziki

1 Cup Chicken broth

1 - 2 Cups White Cheese Blend (Asagio, Parmesan & Romano)

Oregano, to taste

Basil, to taste



Make zoodles or cucumber noodles using a spiralizer (Kitchen Aid) attachment. Pat noodles dry.

In a Medium or large saucepan, over medium heat cook cream of chicken, tzatziki and chicken broth. Add cheese until melted. Sprinkle in some Oregano and Basil, to taste.


Chop chicken 3 - 4 chicken breasts into bite size pieces. Add chicken pieces to saucepan and cook until all chicken is warm and cheese is melted.


Server with cucumber noodles.


*Another option for the chicken is to cook bite size (non-flavored) chicken pieces in Souvlaki marinade. Then add the cooked chicken into the cheesy alfredo sauce.
