*Improved Bison sausage recipe
We found a recipe we liked even more than the original bison sausage recipe that I listed previously. We made this lovely Bison Sausage, and used it for Biscuits & Gravy. While Biscuits & Gravy are not low-Carb, you can make this Bison sausage and use it in different dishes.
2 lbs Bison Meat
1 Tbl. dried chili flakes
2 Tbl salt
1 1/2 tsp ground garlic (or garlic powder)
1 tsp dry Thyme
1 1/2 tsp dry Oregano
1/3 Cup Red Wine Vinegar
Mix all ingredients with meat in a bowl until all spices are incorporated into the meat. Put in a covered bowl in the refrigerator over night. Brown meat in a skillet over medium-high heat until all meat is brown.
If you wish to make patties, just form into small circles before cooking in the skillet.
You may also just cook the entire 2 lbs of meat in the skillet breaking it up into small pieces as you brown/cook the sausage. Then you can use the small bite-size sausage in biscuits & gravy or in a scramble.
