*Left-overs...do a scramble.


We purchased a deep fried boneless turkey that had so much meat! We've been using the turkey for many different dishes because it is so good. You can use any protein (meat) and veggies you want. Here's what we did for this one.


Ingredients:

Deep fried turkey

Chicken pineapple sausage

Asparagus

Tomatoes

Eggs

Tomatillo Dressing

*Cheese - optional

*Guacamole - optional


Do your mise en place (which means putting in place). Cut asparagus, tomatoes and meats into bite size pieces. Put 6 - 8 eggs into a medium bowl and stir until mixed. Add salt and pepper to taste.


Warm up meat in large skillet over medium heat. After a few minutes add eggs. Before eggs are totally cooked, add asparagus and tomatoes (and cheese if you wish). Cook until there are no wet eggs left and asparagus is bright green.


We like to add tomatillo dressing (from Café Rio) to the top. You may also add guacamole or top with honey mustard or other dressing.
