Like Shrimp?
Shrimp skewers looked so good, I just had to try my hand at making them. I did two varieties: Raspberry lime and Chili lime. Remember, if you are doing skewers to soak the wood for at least 2 hours before putting your shrimp on to cook.

Raspberry Lime Shrimp Skewers:
Ingredients:
1/2 Cup Litehouse Raspberry Lime Vinaigrette
1/2 teaspoon Red Pepper Flakes
1 Tablespoon Fresh Cilantro
1/2 lb. Shrimp (peeled and deveined)
2 Limes, juiced
Directions:
1. Add raspberry lime dressing, lime juice, red pepper flakes and cilantro to a medium bowl, or a gallon size Ziploc bag.

2. Add shrimp and toss well to coat.
3. Place in the refrigerator for 15 - 20 minutes to marinate.
4. Put shrimp on skewers, and grill over medium heat for 2 - 3 minutes per side.
5. Serve with lime wedges and fresh raspberries.
*Do not put the raspberries on the skewers before cooking. They just fall off in the grill.

Chili Lime Shrimp
Ingredients:
1 lb. Shrimp (peeled & deveined)
1/4 Cup Lime Juice
2 Tablespoons Olive Oil
1 Tablespoon Cilantro or Parsley
2 Tablespoons Thai Sweet Chili Sauce
2 Garlic Cloves finely chopped (or 2 Tablespoons of Minced Garlic)
1/2 Tablespoon Honey
Pinch of Salt

Directions:
1. Mix all ingredients in a large measuring cup. Pour into a gallon size Ziploc bag.
2. Add shrimp and toss well to coat.
3. Place in the refrigerator for 15 - 20 minutes to marinate.
4. Over medium heat, pour all shrimp and sauce into a large 12" skillet. Cook 2 - 3 minutes on each side or until all the shrimp is pink in color.

This Chili Lime Marinade is excellent for shrimp, fish and lobster chunks.
