Thought pasta was out now that you are doing a low-Carb lifestyle. Here is a recipe to celebrate.
My Mother-in-law made this wonderful salad with rotini pasta, meatballs and fruit. It may sound weird, but it's delicious. The fruits I use are higher in Carbs, so still watch your portion size. However, these "Healthy Noodles" are only 5 Carbs per serving (2 servings per bag).
This recipe is enough for 4 people.
2 bags Healthy Noodles
1 pkg chicken meatballs (mango/coconut)
1 can pineapple tidbits
1 can mandarin oranges
1 Cup Mango pieces
Citrus Mango dressing
Open 2 bags of Healthy Noodles and put them in a colander. Run warm water over them. Separate noodles with clean fingers as water runs through.
Cut meatballs into quarters, and warm in the microwave before adding to the salad.
Drain fruits so there is no excess juice.
In a large bowl add all ingredients (except dressing). Add meatballs last. Add dressing and toss until all is coated.
