*Quick and healthy seafood dinner

If you love seafood, this is a quick and easy healthy meal. You can buy Tilapia or other seafood at the deli or refrigerated section of the store. If you buy a bag of Tilapia or other seafood and freeze it, you can just pull out the number of fillets you want for dinner and thaw them in a bowl of hot water. Cover the bowl with something to trap in the heat. Within about 15 minutes your fish is ready to cook.
*Note: If you are thawing seafood, make sure you use it that day or it will go bad.
Ingredients:
2 Tilapia Fillets
Scallops (number you want for dinner)
Asian Garlic Rub
10 - 12 Asparagus spears
Italian Mozzarella (or other cheese)

Directions:
Sprinkle Asian Garlic Rub on your Tilapia and scallops. depending on how big your tilapia is, you may need two skillets; one for tilapia and one for the scallops. Heat your skillet with a little oil in the bottom at medium heat. While this heats, prepare your asparagus. Cut off the hard ends (opposite the bushy part). Put asparagus in steamer (with a little water in the bottom) and cover with cheese. Add tilapia and scallops to the skillet and cook. While these cook, put your steamer in the microwave and heat the asparagus and cook for 1 - 1 1/2 minutes (or until cheese is melted).
Cook tilapia and scallops about 2 minutes on each side. You can tell the tilapia is done by sticking it with a fork. If it flakes easily, it is done. Scallops are done when the color changes from a somewhat see through white to solid white. Do not overcook or they will be rubbery. Usually they are ready to turn over when they start sticking to the pan on the bottom. You only need about 1 - 2 minutes on each side.
*For variety. You can just do a green salad on the side or another healthy vegetable.
