Red Velvet Oreos


Is there anything better than home made Oreos...how about Red Velvet Oreos? This recipe is easy and will impress anyone who enjoys Red Velvet. It is a simple recipe and the cream cheese frosting makes these little treats perfect for parties or potlucks.


Ingredients for cookies:

2 pkg Red Velvet Cake mix

4 Eggs

2/3 Cup Oil


Ingredients for frosting:

8 oz Cream Cheese

1/2 Cup (or 1 stick butter/margarine)

4 - 6 Cups Powdered Sugar

1 tsp Vanilla

Dash of Salt


Directions:

Preheat the oven to 350*. Line a baking sheet with wax paper/parchment paper.


Mix cookie ingredients until all is incorporated and you have a red cookie dough. Use a small spoon or small cookie scoop to drop dough onto the wax paper. Flatten a little with clean fingers.



Bake at 350* for 9 - 11 minutes.


While cookies bake, make the frosting with room temperature cream cheese and butter. Add powdered sugar about 1 - 2 cups at a time. Add Vanilla and a dash of salt. I use about 6 cups of powdered sugar, but you can use less if you like more cream cheese flavor. Frosting should be thick.



Once cookies are done, take them off the baking sheet and let cool on cooling rack for about 15 minutes. Frost the flat side of one cookie and add another cookie to the top of the frosting. Squish cookies together to flatten the frosting.



One batch of frosting is enough for about 1 1/2 batches of cookies.
