*Shaved Asparagus Salad

Ingredients:

1 bunch of Asparagus

2 Tablespoons Lemon Herb Aioli

Pastrami or other salty meat (Prosciutto, bacon), chopped into small pieces.

Parmesan, Asagio or Mozarella cheese, cubed


Directions:

1. Use potato peeler to peel long strands of asparagus. It works best to put the asparagus on the cutting board, hold the thick end (you won't use that part) and peel until it's too thin to peel anymore. You can continue to peel as much as you can from the thin strand. Then, break up the rest of the top of the asparagus to add to the salad.

2. Melt the Lemon Herb Aioli in a small microwave safe dish. Pour over shaved asparagus and toss to coat.

3. Have cheese and meat pieces on the side so you can add it to your helping when served.




This salad does not last too long after adding the sauce. So, add Lemon Herb Aioli just before serving.
