*Smoked Scallops with Orange Sauce

I finally found a way to smoke scallops. They turned out beautifully and I want to share this recipe.
Ingredients:
3 Medium Oranges
1 Lemon
2 Tablespoons Sugar
1 Tablespoon Apple Cider Vinegar
1/2 teaspoon ground Coriander
2 Tablespoons Butter
1 1/2 lbs Sea Scallops
1/4 teaspoon Salt
1/8 teaspoon Pepper
1 Tablespoon Olive Oil
Directions:
Grate 1 Tablespoon Orange zest, then juice the (3) oranges and lemon into a bowl. Add vinegar and coriander and stir to combine.
Sprinkle the sugar in a skillet and cook over medium-high heat until dark amber in color, about 5 minutes. Remove from heat and whisk in citrus juice mixture.

Return to medium heat and boil until thick, stirring every few minutes, about 5 minutes. If the sugar hardens, it will dissolve as the sauce heats and thickens.
Remove pan from heat and whisk in the butter. Cover the pan and set aside.

3. Pre-heat smoker to 350*. Put cast iron skillet with a little oil in the smoker to heat.

4. Season scallops on one side with salt and pepper. Once smoker reaches 350*, add scallops (seasoned-side down) in cast iron skillet on the smoker.

5. Cook 4 minutes until golden. Flip and cook until golden on the other side 3 - 4 minutes.
6. When ready to serve drizzle the orange sauce (that you set aside) over the scallops.
