*Stir Fry on vacation

Even on vacation you can still eat healthy. Of course, it helps if you are staying somewhere with a kitchen. This is what we did on vacation with a quick stop at the grocery store (or market) for fresh food.


Ingredients:

Boneless Chicken thighs (or breasts). Thighs are more moist and have more flavor.

Sweet Chili Peanut Sauce

Bean Sprouts

Broccoli

Carrots

Sugar Snap Peas




Directions:


Cut chicken into bite size pieces and cook in skillet over medium heat. While chicken is cooking chop up your vegetables. Add sauce to the chicken after chicken is cooked.

Add chopped veggies to pan and cook for a few minutes until all ingredients are indorporated and have sauce. Serve and enjoy!
