*Too much lobster meat?

As I stated in my last blog, the lobster chunk meat comes in a big bag - about 2 - 3 pounds. That is way to much for two people to eat for one meal with steak. So, we did cook the entire bag of lobster meat on New Year's Eve, but what to do with the left-overs?


This is what we did for breakfast New Year's Day. It was delicious! Here's what we did.

Cut up some asparagus spears (removing the hard stem), and cut up some tomatoes. We just used whatever vegetables we had lying around. Put left-over lobster chunk meat in the 12" Copper Skillet, and after all the meat is warm, add the asparagus and tomatoes. Stir and cook on Medium high for about 5 more minutes, until the asparagus is bright green. Then, put the lid on and turn off the heat. This will keep the mixture warm while you make some over medium eggs.

For the eggs, I do one at a time in an 8" skillet. Butter the pan, when the egg is in the pan use the spatula to "pop" the thick part of the egg white. Let it drain out so the egg white is more flat. Cook on medium heat. When you flip it over use the spatula to push down around the yolk (on the this white). This will help the egg whites cook thoroughly.

As a side note, if you are doing a big dinner one night and know you will have too much food, think of how you can make your left-overs into something delicious as well.
